We've recently heard how, per capita, the US is over-retailed. Turns out, we're also over-restauranted. This piece is a solid overview of the restaurant industry: someone should cut and paste it into the "First Day Declaration" of the next restaurantor to file for bankruptcy and save a client a few hours of billing.
